Kolhapuri chicken curry









Ingredients :
Chicken ( 1 kg.)
onion ( 2 )
tomato ( 1 )
garlic ( 5-6 cloves )
ginger ( 1 inch piece )
green chili ( 2 )
coriander ( 1 cup )
salt
turmeric ( 1/2 tea spoon )
red chili powder ( use onion garlic chili powder if available 1 spoon )
deghi mirch powder ( 1 spoon , it adds nice red color to gravy )
sesame seeds ( 1 spoon )
coriander seeds ( 1 spoon )
red chilies ( 2-3 dry ,soak it in hot water for 5 minutes )
poppy seeds ( 1spoon )
coriander cumin powder ( 1spoon )
dry coconut ( 1 spoon )
pepper ( 5-6 )
cloves ( 3-4 )
cinnamon stick ( 1 inch )
fennel seeds ( 1 spoon )
chicken broth ( 2 cups or 2cups of warm water )
oil ( 5-6 spoons )


Recipe :
Start with all dry whole garam masala ..dry roast coriander seeds,fennel seeds,cloves,pepper,cinnamon,sesame,poppy seeds .Roast dry coconut separately till becomes brown.
Now add 3 spoons oil in a hot pan and fry onions till onions become golden brown.
Add ginger and garlic, roast for two minutes ,now add finely chopped tomato.
Let this mixture fry well till oil starts to come out.











Grind all roasted garam masala , soaked red chilies,green chilies with fried tomato onion and coriander .Make fine paste.
Take a big pan,heat oil and add chicken ,salt,turmeric,red chili powder and deghi mirch powder.cover pan with lid . Chicken will leave its own water ..stir it well.At this point add chicken broth ( you can also use 2 cups of water if chicken broth is not available ) Boil chicken till its cooked .


Take out grounded gravy and fry it for 6-7 minutes till oil starts to come out.stir in between .


now add this well fried paste to chicken ...let it cook for 15 minutes with lid on.
Garnish Kolhapuri chicken rassa with coriander .
You can serve Kolhapuri chicken with capati ( indian bread ) or rice,bread slice with onion salad.
