mutton kolhapuri







Ingredients :
Mutton ( 1 &1/2 pound )
onion ( 2 )
tomato ( 2 )
garlic ( 5-6 cloves )
ginger ( 2 inch piece )
dry coconut ( 2 spoons )
wet coconut ( 2 spoons )
coriander ( 1 cup )
green chillies ( 1 or 2 )
turmeric powder ( 1 tea spoon )
salt
poppy seeds  ( 1 spoon )
dry red chillies ( 2 )
sesame ( 1 spoon )
clove ( 4-5 )
coriander seeds ( 1 spoon )
cardamon ( 1 inch )
red chillie powder ( 1 spoon )
coriander & cumin Powder ( 1 spoon )
ginger garlic paste ( 1 tea spoon )
fennel seeds ( 1 tea spoon )
oil ( 6 spoons )


Recipe :
Wash mutton pieces and marinate with some coriander , salt ,ginger garlic paste and turmeric for one hour.

Cut onion , tomato , ginger and garlic pieces , coriander 


Now dry roast all Garam masala that is clove,pepper, cinnamon,sesame ,poppy seeds,dry red chillies,
fennel seeds and coriander seeds.
Roast dry coconut till it becomes golden brown in color.
Roast wet coconut also.


In a hot pan add oil , now saute ginger , garlic cloves and add onions to it ..
let onion fry till it becomes brown in color .



Divide onion in to two portions .Once it cools down  grind one portion of onion with roasted garam masala ,coconut both dry and wet,coriander leaves .make a fine paste out of it .
Next step is to add chopped tomato in remaining onion and fry till oil starts to ooze out , you can add 1 spoon  of oil at this point . let tomato blend finely with onions now add red chili powder and coriander cumin powder.


fry this mixture well till you get nice aroma .Meanwhile add one spoon oil in to pressure cooker and add marinated mutton .let it cook for 2 minutes add one cup of water and cook mutton till four whistles.


Get back to the gravy part now , when tomato onion gravy leaves oil add grounded paste.
Cook it nicely for five minutes . Do not add water but make sure to stir it every now and then .
Once mutton is boiled add cooked mutton to this gravy . If mutton is still little uncooked , cook with this onion gravy for 15 minutes with lid on,do not forget to stir in between . if possible cover it with a steel plate with little water in it .


Your mutton kolhapuri is ready now garnish it with lots of coriander and its ready to be served ..
Sure its a treat for mutton lovers ..when served with chapati ( Indian bread ) or rice !!
